Ingredients
2 cups cooked long grain rice
1 cup carrots, finely minced
¼ red bell pepper, minced
¼ green bell pepper, minced
Dressing
1 teaspoon yellow mustard
1 teaspoon salt
¼ teaspoon black pepper
2 tablespoons vinegar
2 tablespoons lemon juice
2 tablespoons olive oil
4 tablespoons water
100 g turkey breast, diced
100 g light yellow cheese, diced
Preparation
Mix rice and vegetables.
Mix dressing ingredients well.
Add to rice and vegetables and mix again.
Garnish with turkey and cheese.
Tip: If rice was uncooked, start by boiling ¾ cups. (three quarters)
Prepare large amounts of dressing for later use. It could be kept in the fridge for 7 days.
