Ingredients
2 cups water
4 cups cooked black fava beans
4 garlic cloves, crushed
1 teaspoon salt
cup lemon juice
bunch parsley, finely chopped
4 tablespoons olive oil
Method of Preparation
In a large pan, bring water to boil.
Add fava beans over medium heat until tender.
Put in a large bowl with its cooking liquid.
In a small bowl, mix garlic, salt and lemon juice.
Add to beans and mix well.
Garnish with chopped parsley and olive oil.
Serve hot with fresh onions and tomatoes.
Tip: If fava beans were uncooked, start by boiling 1 cups of dried fava beans or use canned cooked beans.
